Quinoa Salad

Makes 4 to 6 servings
- 1 cup Quinoa cooked
- 1/2 tsp. of sea salt
- 1 cup water
- I red onion chopped
- 10 Basil Leaves washed
- 10 vine ripened cherry tomatoes halved
- 2/3 cup parsley, minced
Dressing
- 2-3 cloves garlic, minced
- 1/2 cup freshly squeezed lemon juice
- 2 tablespoons extra-virgin olive oil
- 1 tsp. sea salt
Place cooked quinoa in serving bowl
Add basil, tomatoes, onion and parsley to quinoa
To make dressing combine garlic, lemon juice, oil, and sea salt
Pour dressing over quinoa salad and toss making sure it’s thoroughly coated
Serve and enjoy
