Kakadu Plum and Blueberry Ice Cream

Introducing my luscious Kakadu Plum and Blueberry Ice Cream.
This recipe was inspired after I was enlisted by Natural Instinct to come up with a bunch of lunchtime recipes using ingredients featured in their skincare range. You can read a review of the range here.
One of the challenges was to use an interesting native ingredient called Kakadu plum which was used traditionally by Australian Aboriginals as an antiseptic and soothing balm for aching limbs.
With more than twenty times the vitamin C content of oranges I was eager to try out this Supercharged Food and create a gourmet dessert that was not only simple to make but also healthy and delicious.

Kakadu plum or gabinge powder is available in health food stores or I bought mine online at the Bush Food Shop.
Kakadu Plum and Blueberry Ice Cream
Serves 2
Ingredients
- 2 frozen ripe bananas
- 1 cup frozen blueberries
- ¼ cup chilled coconut milk
- 1 tsp kakadu plum powder (gubinge)
- 1 tsp vanilla extract (no alcohol) or fresh vanilla
- Mint leaves and pistachios to decorate
Method
Whizz bananas, blueberries and coconut milk, Kakadu plum powder and vanilla in food processor until creamy add more coconut milk if needed to get a smooth consistency
Serve in bowls and decorate with mint leaves and pistachios
(This tastes nice made just before serving)
