Seven Minute One Pan Salmon with Greens
Some nights you just want to settle into a comfy chair, put your feet up and relax and honestly the less time spent deliberating and dilly-dallying in the kitchen with the fridge door open the better.
Enter my scrumptious one pan salmon with greens recipe. That means less time washing up and you'll be out of the kitchen before you can say 'I'll be there in a minute".
This recipe has big flavours coming from all angles, the luscious mint combined with the sweetness of the cherry toms, the flavoursome and fragrant sage and asparagus and lemony salmon make it a nifty little number to satisfy all of your taste buds.
It's a no fuss dinner for any night of the week.
Seven Minute One Pan Salmon with Greens
Serves One
Ingredients
- 1 piece salmon with skin on
- 2 TBS butter or Extra Virgin olive oil
- 6 asparagus spears
- 6 large sage leaves
- 1 cup baby spinach leaves
- handful fresh mint
- two cherry tomatoes halved
- 1 tsp Extra Virgin olive oil
- Celtic sea salt to taste
- Squeeze of lemon (optional for serving)
Method
Heat butter in frying pan in stove top over a medium heat and place salmon in skin side down
Meanwhile chop woody ends off asparagus
Place sage leaves and asparagus in same pan and cook for about three to four minutes turning often
Flip salmon over then cook the other side
Remove sage from the pan once it is crispy and then remove asparagus and place on a waiting plate (asparagus should be cooked through with brown markings but not burnt)
Place spinach in pan with a little extra butter if needed (you should have enough pan juices here)
Meanwhile tear some mint leaves and place on plate and top with tomatoes, drizzle with olive oil and add sea salt
Remove salmon and spinach from pan and add to plate and squeeze lemon over the top.
